Hi Neto, sounds like most of the things you want to do are more related to functionality within moodle than courselab.
1) Moddle is interpreting the output from the module and the conditions you apply, the status once a module is completed is defined by the module but stored in moodle. The tracking function will retain the status, pages visited, scores etc. If questions are not specifically defined as allowing recurring approaches moodle will not allow them to be attempted again in the current or subsequent sessions. Try changing the properties of the questions to allow recurring approaches.
2) You can make sequential parallel sub sections within courselab and only allow users to progress if they have completed a section (I can mail you a sample) BUT that is within one courselab module. If there are multiple and discrete modules that form sections of one overall unit then moodle is the area to give you this control.
Have you tried the moodle forums, you are more likely to find the answers there I would think.
