Other than the Template Pack, can these templates be further modifed or customized for an organizations look & feel? Is there a standard default template to start from that's available?

In fact, any CourseLab template can be modified using custom pictures instead of default backgrounds and buttons. Then it can be saved (to My Templates section) using "Add module to templates" menu option and used to create new modules.
