Is it possible to hide (some) slides in a course.

The answer is a conditional Yes.
If you don't use the standard inbuilt navigation buttons in the templates or the 'Contents' manifest pop up list then you have total control over which pages the user can go to. The problem is you have to take the responsibility for assigning the correct goto page action in your navigation buttons.
